The English tradition of afternoon tea as a time for relaxation, refreshment and socializing dates back to the 1840's. It's inception can be attributed to Anna, the 7th Duchess of Bedford. She asked that a tray of tea with some bread and cakes be brought to her room around 4 p.m. to tide her over until the customary 9 p.m. dinner hour. This practice spread among her friends as she invited them to join her.
 
Victorian ladies were judged by the quality of their afternoon teas and tea services. The menu generally included delicate sandwiches to take the edge off the appetite, breads or scones with jams, simple cakes and elaborate sweets. The English traditionally took their tea with milk. Tea with lemon was introduced by Queen Victoria after visiting Russia with one of her daughters. The two ways are never combined since lemon will cause the milk to curdle.
 
Many believe that English high tea is a more formal version of afternoon (low) tea, but this is not the case. High tea was usually served at the kitchen or dining table and had more substantial fare with the addition of at least one cooked dish. Afternoon tea was normally served at a low table and was the more formal of the two.
 
The interest in afternoon tea has grown in the United States as people have come to realize it is a wonderful way to enjoy the company of others, the ambiance of past times and the enchanting world of teas.
